Healthy Chocolate Muffins

Okay, so you guys may think i’m crazy if you have never heard of putting black beans in your muffins. I understand it may sound weird at first, but please trust me on this. These muffins are delicious and they do not have to be a cheat day snack. They are a good source of fibre, protein, potassium, omega 3 &6 fatty acids because of the black beans and hemp hearts. So they are not only yummy but they will also help keep you full. They are also a good option for those of you who may have gluten sensitivities as there is no flour in the making of these muffins. makes approx. 20 muffins

Ingredients:

2 cans black beans

6 eggs

1/2 cup coconut oil

3/4 cup honey

1 tablespoon water

2 tablespoons vanilla extract

2/3 cup cocoa powder

2 teaspoons baking powder

1 teaspoon baking soda

1 cup hemp hearts

  • dark chocolate chips sprinkled on top before putting into oven

Directions:

  1. Preheat oven to 375
  2. Blend all ingredients in food processor until entirely smooth
  3. Pour mix into paper muffin cups in muffin baking pan (almost to the top)
  4. Sprinkle dark chocolate chips on top
  5. Put in oven for 23-25mins
